@thebelfastjoiner's Easy Sticky Chicken:
Ingredients (per serving):
1 chicken breast
1 cup rice (or cous cous)
Dice up that cucumber & celery into nice chunks. Half the cherry toms, finely dice the onion. Bang it all in a bowl and mix it up. Add 1-2tbsp of Greek yoghurt, sprinkle of coarse black pepper and mix. Set aside.
Boil kettle. Whilst it’s boiling, wash and trim up your chicken breast and either butterfly, dice or cut into strips.
Throw it into a bowl with a splash of oil, Worcestershire sauce, sprinkle of salt & pepper, smoked paprika, a little thyme and chilli powder (or diced fresh chillies) and anything else you might like.
Jerk seasoning works well here. Very versatile dish this.
Heat a pan and fire the chicken in, and just as you’ve browned the outside drop the rice in the water and bring to a boil.
Keep the chicken moving and once it’s about 80% cooked start sprinkling in brown sugar (or manuka honey and keep it moving to coat the chicken.
This will knock the heat back from any spice so make sure to test as you go.
You want the sauce to thicken up as it reduces and it should begin to caramelise on the chicken.
Drain the rice, dish out a portion of that tangy bad boy salad and load the plate with that sexy sticky chicken. Absolute taste sensation.
